BELLINI
●3 ounces white peach puree or peach nectar
●4-6 ounces chilled prosecco or other dry sparkling wine
●Peach slice
Pour the peach puree into a chilled champagne flute.
Slowly add the Prosecco, stirring gently.
Garnish with fresh peach.
Makes 1 serving.

OPRAH’S POMEGRANATE MARTINI
●1 1/2 cups pomegranate juice
●2 ounces Absolut Citron vodka or white tequila
●1 ounce Cointreau
●Cup of ice
●Splash of sparkling water, optional
●Squeeze of lemon, optional
●Pomegranate arils (the tiny, edible seeds that contain the juice)
Shake ingredients in a shaker and put in chilled martini glasses.
Put pomegranate arils into glass as garnish.
Makes 2 servings.

BLOODY MARY
●2 ounces vodka
●4 ounces tomato juice
● 1/2 ounce fresh lemon juice
● 1/4 teaspoon horseradish, freshly grated
●2-3 dashes Tabasco sauce
●2-3 dashes Worcestershire sauce
●Lemon wedge
●Celery stick
Shake the liquid ingredients vigorously with ice. Strain into an ice-filled highball glass.
Squeeze the lemon wedge over the drink, and drop it in. Garnish with celery.
Makes 1 serving.
Note: For a Bloody Marie, add 1/2 teaspoon anisette. For a Bloody Caesar, substitute Clamato juice or 3 ounces tomato with 2 ounces clam juice for tomato juice.

MIMOSA
●2 ounces freshly squeezed orange juice
● 1/4 ounce Cointreau
●3-5 ounces chilled champagne
Pour the orange juice and Cointreau into a chilled champagne flute.
Top slowly with champagne, stirring briefly.
Makes 1 serving.

RAMOS GIN FIZZ
●2 ounces gin
●1 ounce fresh lemon juice
● 1/2 ounce fresh lime juice
●1 teaspoon vanilla extract
●2-3 dashes orange flower water
●1 egg white (optional)
●1 1/2 ounces heavy cream
●1 tablespoon superfine sugar
●2-4 ounces chilled club soda
●Lemon slice
Shake gin, lemon juice, lime juice, vanilla extract, flower water, egg white, heavy cream and sugar vigorously with ice for 3-4 minutes.
Strain into chilled highball glass. Top with club soda and stir gently.
Garnish with lemon.
